Salamanca, Spain becomes the epicenter of haute cuisine with the International Gastronomy Summit: A Monumental Kitchen.
For two days, the World Heritage City will host a unique event that fuses gastronomy, history, and heritage in an incomparable setting. Nationally and internationally renowned chefs will gather to share knowledge, techniques, and reflections on culinary evolution, addressing topics such as sustainability, innovation, and viability in culinary practice.
The summit's program will include presentations, live demonstrations, and sensory experiences that will transform iconic spaces in Salamanca into open-to-the-world kitchens and forums for discussion. More than a gastronomic gathering, this event is conceived as a forum for reflection and exchange, where chefs, restaurateurs, journalists, gourmets, scientists, and leading companies will share perspectives and advances in the sector.

- 2:30 PM. Cocktail luncheon organized by Tierra de Sabor in the lower cloister of the Colegio Arzobispo Fonseca (Archbishop Fonseca College) to promote the products and cuisine of Castilla y León among the Summit participants and attendees.
- 4:30-5:30 PM. Archbishop Fonseca College Chapel. United States, lecture (theoretical). Conversations with Jeremiah Tower: "The Architect of the Modern American Kitchen."
- 5:35-6:30 PM . Chapel of the Archbishop Fonseca College. Paco Morales . Noor: The Reinterpretation of Andalusian Cuisine. This will be followed by a debate on Gastronomy and the University, with Dr. Rafael Moreno Rojas , director of the Chair of Mediterranean Gastronomy at the University of Córdoba, and Dr. Ignacio García, director of the Master's in Oenology at the University of Salamanca .
- 6:45-7:45 PM. Plaza del Concilio de Trento, in front of the facade of the Convent of San Esteban. Spain, cooking presentation with Oriol Castro, Disfrutar Restaurant. The cuisine of the senses .
- 8:00 PM. Cocktail party to discover Salamanca products, wines, and dishes through the Salamanca en Bandeja promotional brand at the Palacio de La Salina.
2. Speakers
Shinobu Namae
Shinobu Namae was born in Yokohama, Japan. Although he initially studied politics at Keio University, his passion for gastronomy led him to train at prestigious restaurants such as Michel Bras (Toya, Japan) and The Fat Duck. In 2010, he opened L'Effervescence in Tokyo as Executive Chef and Director. His restaurant has been recognized with three Michelin stars and one Green Star and has been continuously included in the list of Asia's 50 Best Restaurants from 2014 to 2025.
Namae has received multiple awards, including the Icon Award from Asia's 50 Best Restaurants in 2023 and the "Ethical Cuisine 2022" award from Relais & Châteaux and Taittinger. He was also named to LE CHEF'S LIST's "100 Best Chefs in the World" in 2016. Beyond cooking, Namae is an advocate for sustainability and education. In 2023, he became the first chef to give a speech at the United Nations Headquarters during World Oceans Day. That same year, he received Japan's National Commissioner for Cultural Affairs Award and earned a master's degree in Agricultural and Life Sciences from the University of Tokyo.

4. What to see in Salamanca
Salamanca
Salamanca, a World Heritage City since 1988, deserves a leisurely visit to fully appreciate its beauty and monumentality.
We begin our tour at the College of Archbishop Fonseca , or the Irish College, since after the War of Independence it was ceded to the students of Ireland following the destruction of St. Patrick's College. This Renaissance gem was designed and built by Diego de Siloé and Rodrigo Gil de Hontañón in 1525. It was one of the four colleges that depended on the university and the only one that remains as such today. Inside, the harmonious courtyard, the majestic staircase, and the altarpiece in the chapel, by Alonso Berruguete, are noteworthy.
If we go down Ramón y Cajal Street to the Plaza de las Agustinas, we find the convent that gives it its name, founded by the 7th Count of Monterrey, whose palace is located opposite. The convent, which is cloistered, is not open to visitors, but its monumental church, La Purísima , is, whose main altar is presided over by the Immaculate Conception by José de Ribera. Opposite is the Monterrey Palace , designed by Rodrigo Gil de Hontañón in the purist Plateresque style.

6. The Summit Today
Presentation of the Summit
The Regional Government will bring together prestigious international chefs at the Castilla y León International Gastronomy Summit on May 19 and 20 in Salamanca.
Under the motto "A Monumental Cuisine," the region will become the epicenter of gastronomy with chefs from around the world and around twenty Michelin Stars.

The Regional Minister of Culture, Tourism and Sport, Gonzalo Santonja, presented today, in the "Salón de Pinturas" (Painting Hall) of the Arzobispo Fonseca School, the International Gastronomy Summit of Castilla y León. The summit will be held in the city of Salamanca on May 19 and 20, under the theme "A Monumental Cuisine." The main venue of the summit will be the Arzobispo Fonseca School itself, with various activities taking place in the courtyard of the Minor Schools and next to the San Esteban Convent.
