The Baltasar Otero winery, or "Cueva de Doña Rosa" as it is known in the town, is a large and long excavation carried out in 1918 located in the town of San Adrián del Valle, in the south of the province of León .

It is located on a hill surrounded by 200 other smaller wineries. It was excavated in clayey soil only "with a pick and shovel" and with a lathe to extract the earth by totally primitive and manual means. No additional material was used in its construction, be it stone, brick or concrete, and it is estimated that some 6,000 cubic meters of earth were excavated and extracted outside.

It has rails and wagons inside, as well as a 500,000-liter capacity in American oak vats, the largest having a 96,000-liter capacity.
